Courgette Flowers

Courgette Flowers
This is a delicious first course, make sure the flowers are fresh. When they are fried the mozzarella and anchovies melt inside making a tasty savoury treat.

Ingredients

  • 8 large courgette flowers
  • Fresh mozzarella
  • Tinned anchovies in oil
  • Plain white flower
  • Sparkling water
  • Sunflower oil

Directions

  1. Gently insert a piece of mozzarella and an anchovy inside each flower being careful not to break it. Twist the flower to close it.
  2. Make the batter just before you want to fry the flowers. Mix some sparkling water with flour to make the batter, it should be the consistency of pancake mixture.
  3. Coat the closed flowers in the batter and let the excess drip off.
  4. Heat the sunflower oil in a frying pan. Place the flowers in the boiling oil and fry for 1 minute on both sides. Place on kitchen roll to absorb excess oil before serving.
