Orata all'Isolana -Sea Bream with Potatoes and Tomatoes
This is a great oven dish and simple to prepare.

Ingredients

  • 2 whole sea bream
  • 1Kg of large potatoes
  • 5 large tomatoes
  • 2 cloves of garlic
  • 5 sprigs of rosemary
  • Salt
  • White pepper
  • 1/4 glass of white wine
  • Extra virgin olive oil

Directions

  1. Peel the potatoes and cut lengthways into slices of 5mm thickness. Put a pan of oil on the heat. When the oil starts to boil add the slices of potato. Fry for 1 minute on both sides until they're slightly golden. Dry the excess oil on kitchen roll.
  2. Slice the tomatoes to a similar thickness as the potatoes.
  3. Clean, gut and scale the fish.
  4. Cover the bottom of large oven dish with oil, add a layer of the fried potatoes, sprinkle with salt and add layer of tomatoes. Chop the garlic into 2 or 3 pieces and dot about the dish with rosemary, add salt and white pepper.
  5. Inside each fish insert one clove of garlic, 1 rosemary sprig, salt and white pepper. Score a line along the side of the fish in order to check if it’s ready while cooking. Place the fish on top of the tomato layer and sprinkle some more salt, pepper and olive oil. Pour over the wine.
  6. Bake uncovered in the oven at 180 degrees for 30-50 mins - depending on the fish.
