Our 4 days/3 nights Cooking Courses in Tuscany, although short, have a packed iternary filled with food, fun, wine and laughter! Our Week Long Cookery Courses in Tuscany have a total of 5 cookery lessons in all as well as a full day out to explore the city of Florence.


Gastronomes are well served in this area of Tuscany - the Lucchese cusine is rated as some of the finest in the region. On the menu will be Zuppa di Farro, a hearty soup of beans, the classic tortelli lucchese, pasta parcels filled with a spicy meat filling and covered with a delicious ragu sauce. All cooked with Lucca's finest olive oil. And for a simple, classic dessert we have cantuccini biscuits and a glass of vin santo...

The following is a selectioin of Flavours recipes of some traditional Italian dishes, as well as some specific Tuscan recipes for you to try out at home. First Course

  • Carpaccio - Very thin shavings of Beef Fillet, served cold with Olive Oil and Lemon Juice
  • Lasagne di Zucchine - Courgette/Zucchine Lasagne (V)
  • Stracciatella - A light soup made with homemade broth, eggs and cheese (V)
  • Zuppa di Ceci - A hearty and warming soup with chickpeas and bacon
  • Zuppa di Farro - A filling soup made from Farro (Spelt) and Borlotti Beans (V)


Main Dishes

  • Baccalà - Baccalà is a dried salted cod, and in this recipe, is combined with leeks and tomatoes
  • Pollo Cacciatora - Braised Chicken with Olives, Rosemary and Garlic
  • Coniglio Con Patate - A hearty dish of Roast Rabbit with Potatoes
